Early risers breakfast

This morning, J decided it was time to wake up at 6:45am. -_- It is Saturday. So I decided to make the most of the early start and make a yummy, healthy, gluten free breakfast that she would be happy to gobble up! She was so excited she sang the whole breakfast time. My favourite J quote of the morning was, "Daddy your smoothie is  ready! You better drink it up if you want it!" 

Breakfast - Banana Waffles and Blueberry Banana Smoothies

Banana Waffles:
2 bananas 
2 eggs (free range if you desire)
1 tablespoon of gluten free flour

Pop it all into the food processor and mix it up until smooth. 
Cook them either as a mini pancake on a hot pan with coconut oil or in a waffle press.
Serve with fresh sugar free preserves or if you are lazy like me - St. Dalfour's NO SUGAR added strawberry jam!

Blueberry Banana Smoothie:
1 cup frozen blueberries
1 cup milk ( we used goats milk)
1 tablespoon honey
1 banana
1 tablespoon oats or brown rice flakes
1 teaspoon LSA (optional) 

Pop it all in to the blender until smooth. 
Pour into a glass and drink it up!

Sounds like Josephine is getting to be quite a talker! And a healthy eater!

I love everything blueberry so that smoothie sounds great but what is that last ingredient that's optional?

And the goats milk sounds interesting but I think I'll have to stick with the Fat free cow milk!!! I don't think I am that adventurous!! lol! Blessings to you all !

The optional LSA is ground up linseed, sunflower and almond. We can purchase it already ground in New Zealand - http://www.healtheries.co.nz/products/healthy-foods-and-snacks/product-details/_prod_/Healtheries-LSA-Linseed-Sunflower-Almond
It is full of Omega 3 fatty acids. :)

The goats milk is full fat, pasturised, but not homogenised. It is easier for your body to digest than cows milk. It is pretty pricey here, so sometimes we just use organic, full fat milk. We tend to go for the full fat stuff here as the other is quite processed. Plus, fat is good for you! (according to what I read)

And yes J likes what we give her, she would probably like cake and chips too if we gave it too her! ;)
